White Cheddar Mac & Cheese

1 lb. Farfalle (bowtie) pasta
2 tbsp. Each unsalted butter or margarine, all-purpose flour 2 cups
milk, divided
1/2 tsp. Salt
1/4 tsp. Each black pepper, nutmeg
1 lb. White cheddar cheese, shredded, divided (4 cups) 1 pkg. (10 oz.)
frozen peas, thawed
1/2 lb. Finely diced smoked ham
Heat oven to 350ºF. Coat a 13x9x2" baking dish with nonstick cooking
spray. Cook pasta in lightly salted water following pkg. Directions
about 12 mins. Drain. While pasta is cooking melt butter in a medium
size heavy bottomed saucepan (not nonstick) over medium heat. Stir in
flour until well blended. Cook 1 min. Whisk in 1 cup of milk and cook
whisking continuously until smooth. Whisk in remaining milk and continue
to cook whisking until thickened and smooth about 5 mins. Remove from
heat stir in salt, pepper and nutmeg. Whisk in 2 cups cheese until
smooth. In a large bowl mix pasta, cheese sauce and 1 cup of remaining
cheese. Sir in peas and ham. Pour into prepared baking dish. Scatter
remaining 1 cup cheese evenly over top. Bake 30 mins or until bubbly.
Remove from oven. Allow to cool 10 mins. May be served warm or at room
temp. Makes 12 servings
